Day Three hundred and sixty-two

Dinner: Brown rice penne mac and cheese (crockpot; recipe: Make it Fast, Cook it Slow), chicken sausage, steamed veggies, and blueberries.  Not a dinner of champions, but it was a crazy afternoon, so this'll do.

Day Three hundred and thirty-five

Breakfast: Gluten-free pumpkin blueberry pancakes with scrambled eggs.  I made a double batch and froze half to serve as breakfast for during the week.

Dinner: Turkey hot dogs, gluten-free mac and cheese, and steamed veggies. Something crazy was going on in the afternoon, so I had to abandon my dinner plans and swap in this unexciting dinner instead.

Day three hundred and six

Dinner: Chicken tetrazzini (crockpot; Recipe: Crockery Cookery) over brown rice fusilli, steamed veggies, and clementines.  The tetrazzini was something I'd made a while back as a double, frozen, and thawed earlier today.  All I had to do was boil the pasta and heat the chicken and sauce.  I love when I cook ahead- it gives me a night when I have almost no clean-up.

Day Two hundred and ninety-eight

Lunch: Fresh mozzarella, sweet potato crackers, green beans and red peppers, and clementine slices.

Dinner: Turkey hot dogs on gluten-free buns, corn on the cob, cantaloupe, and steamed veggies.

Day Two hundred and eighty-four

Breakfast: Oatmeal mango banana muffins (whole grain).  My daughter brought home this recipe from a "fruit of the month" activity in school.  My husband called these "the perfect muffins to go with my coffee," which is means a lot from him.

Dinner: A Husband-planned-meal: BBQed chicken, tater tots, steamed veggies, cherries, and cucumbers from the garden. I was just thrilled that I got a night of from cooking!

Day Two hundred and eighty-two

Lunch: Cream of broccoli soup (an extra jar from the freezer) with steamed veggies mixed in.

Dinner: Chicken tetrazzini (crockpot) over whole grain spaghetti, sugar snap peas, cantaloupe, and grapes.  I made a double batch of the tetrazzini in the crockpot, and froze it for a future dinner.  That makes me happier than the initial meal itself!

Day Two hundred and fifty-six

Dinner: Turkey sloppy joes (with diced apple and pureed butternut squash) on whole-grain rolls, steamed veggies, fresh strawberries.  I'd made sloppy joes a while back, tripled the recipe, and froze the extras.  This morning when I realized we were going to be out till dinner time, I was thrilled to defrost it, and have it waiting when we got home.  I could just kiss myself.  ;)  Here's the recipe.

Day Two hundred and twenty-nine

Lunch: My daughter was begging for mac & cheese, so I whipped up a box of Annie's. It has pureed cauliflower in it, but one would never know.

Homemade pizza, with a half whole wheat crust. I was really bummed about this pizza, but I fretted for nothing. My main reason for making pizza dough was that I had a ball of fresh mozzarella needing to be used up. When I got out said ball of cheese, it was green. Darnit. I had to use cheddar, but it actually tasted great. The fresh basil from the garden combined with the cheddar was an interesting combination.

Dinner: Cheddar basil pizza, steamed veggies, fresh watermelon.

Day One hundred and twenty-eight

Dinner: Pizza, steamed vegetables, and fresh cantaloupe. We were supposed to have leftovers tonight, but no one was in the mood for boring leftovers on a Friday evening. So, my husband ordered pizza, and we all loved him for it!!

Day Sixty-six

Dinner: Breaded, baked tilapia (thanks to my friend Christie for the Viennese breadcrumbs, they were very tasty!), quinoa pilaf (quinoa with diced yellow squash and zucchini), and steamed veggies. We had mango after this, but I forgot to cut it up before I photographed it.
