Day Four hundred and six

Breakfast for dinner: Blueberry pumpkin pancakes, turkey bacon, scrambled spinach eggs, and mango.

Day Four hundred and three

Lunch: Mac & cheese (brown rice pasta, cheddar cheese, pureed butternut squash).  Served w/veggies and apple.

Breakfast  for dinner: Scrambled eggs, turkey sausage, mango, and sweet potato fries. As I look at this picture, I wonder, where are our vegetables? I think spinach was supposed to go into the eggs, and we forgot.

Day Three hundred and ninety-four

Breakfast: Bob's Hot Cereal with cinnamon and peaches.

Buns (hamburger, more specifically).

Buns (post oven).

Dinner: Turkey cheeseburgers on above-mentioned buns, steamed veggies, sweet potato fries, and mango chunks.

Day Two hundred and ninety-six

This was our first "official" gluten-free dinner, although truthfully, I had it planned from before we became gluten-free.  The good thing about many of our dinners is that it turns out they're already gluten-free, or easy to convert with a few substitutions.

Shepard's pie (crockpot; ground turkey, vegetables, a mashed potato crust; recipe: Make it Fast, Cook it Slow).

Dinner: Shepard's pie and frozen mango chunks.

Day Sixty-eight

Birthday breakfast: My daughter requested scrambled cheese eggs, which we had with whole grain english muffins, and mangoes.

Birthday dinner: Another request- whole grain spaghetti, turkey meatballs, and sugar snap peas.

Day Sixty-six

Dinner: Breaded, baked tilapia (thanks to my friend Christie for the Viennese breadcrumbs, they were very tasty!), quinoa pilaf (quinoa with diced yellow squash and zucchini), and steamed veggies. We had mango after this, but I forgot to cut it up before I photographed it.

Day Sixty-four

Breakfast: Maple french toast sticks (with sweet potato puree; Recipe: Sneaky Chef)

Breakfast: French toast sticks, turkey bacon, pineapple, and grapes


Dinner: Fondue night. Cheese and white wine fondue


Grilled chicken and steamed broccoli, cauliflower, and carrots


Cheddar biscuits (think Red Lobster biscuits, but these are half whole wheat and all natural; recipe: Fix, Freeze, Feast)


Dinner: Cheese fondue, grilled chicken, steamed veggies, and cheddar biscuits


Last but not least, fruit salad. My husband made this- mangos, strawberries, and blueberries

Day Thirteen

Dinner: Whole wheat french bread. The dough is a bread machine recipe- pretty easy.


Dinner: Farmer's market lasagna (recipe: Parents magazine). Whole wheat lasagna noodles, part-skim ricotta and mozzarella, spinach, diced zucchini, yellow squash, red peppers, and shredded carrot. This made enough for two nights' worth of dinner... hooray!


Dinner: Mango chunks and blueberries.
