Day Two hundred and seventy-two

A quick lunch: Hard-boiled eggs, whole wheat bread, fresh mozzarella, spinach, baby carrots, and strawberries.

Dinner: Cheddar BLTs (with turkey bacon, on whole wheat).  I am proud to say that this was my first BLT... so tasty! Thanks to Jill for the idea!

Day Two hundred and seventy-one

Bagels with strawberry cream cheese. I made the cream cheese, not the bagels. ;)

Dinner: Spinach eggplant rollatini.  I'd made doubles of this a while back and froze one, and tonight was the perfect night to use it.  I can never argue with a home-cooked meal that I cooked, but didn't cook today. Te he.  Before putting it into the oven, I spruced it up with fresh marinara sauce, and some basil from the garden.

Day Two hundred and sixty-eight

Dinner: Big salad (spinach, romaine, diced apples, cucumber, cherry tomatoes- from the garden!, zucchini, cucumber- from the garden!- steamed carrots and broccoli, canteloupe, and hard-boiled eggs.  Whew.  Some challah and light ranch on the side, and a cool dinner on a hot summer's eve was done.

Dinner: Turkey cheeseburgers on whole grain buns, mashed potatoes, peas, and watermelon.

Day Two hundred and sixty-five

Smoothie: Before

Breakfast: Spinach mango strawberry smoothies (recipe: Cooking Light).  Referred to as "Martian smoothies" to skeptical children.

Dinner: Grilled ranch chicken (thank you, hubby), whole wheat pasta with steamed spinach, and watermelon.

We haven't eaten this, yet, but it's growing in the garden. What kind of a cucumber is this?!?
S'mores... giant grilled marshmallows obliterated the melted chocolate, but my girls were tickled to be covered in sticky white fluff, so all was not lost.  ;)

Day Two hundred and sixty-four

"Power sticks" (peanut butter cereal bars; recipe: Weight Watchers.)  My girls can't get enough of these, so I make them in a triple batch, and freeze.  The perfect portable snack.

Dinner: Chicken in a peach mango salsa (crockpot; recipe: Make it Fast, Cook it Slow) over rice with cauliflower puree, watermelon, and steamed veggies

Day Two hundred and sixty

Dinner: Chicken marsala (McCormick recipe, adapted for the crockpot) over egg noodles, steamed zucchini and broccoli over romaine lettuce, and watermelon.  A perfect dinner to come home to after an afternoon at the pool!

Day Two hundred and fifty-nine

Breakfast: Scrambled eggs with cheese on a whole-wheat english muffin.

Watermelon.  Technically I did not "cook" this, but as it's taking up plenty of real estate in my fridge, and took quite a while to cut up, it's game.
