Day Four hundred and thirteen


Bread: NIRVANA!  After quite a few months of trying bread recipe after recipe, we have hit our nirvana and will stop looking.  This awesome recipe is an amaranth and brown rice flour loaf, and the recipe comes from Gluten Free Makeovers, which has a ton of great recipes.  This tasted just like a loaf of whole grain bread, and not "gluten-free" in any way.

School lunch: PB&J on tapioca bread, green beans, cucumber, apple slices, hard-boiled eggs, and cheese.

Day Two hundred and ninety-nine


Gluten-free lunch: Cottage cheese, edamame crackers, carrots and green beans, and cantaloupe.  In case it's not obvious, this is my daughter's school lunchbox.
Dinner: Chicken and rice soup (crockpot; Make it Fast, Cook it Slow).

Lunch: Fresh mozzarella, sweet potato crackers, green beans and red peppers, and clementine slices.

Dinner: Turkey hot dogs on gluten-free buns, corn on the cob, cantaloupe, and steamed veggies.

Day Two hundred and eighty-six

We had a family BBQ at our house the other day.  My sister and her husband are in town, so it was my parents, grandparents, sister and husband, and my family.  A fun time, and full belly, were had by all.  ;)

Grilled veggies: Zucchini, yellow squash, and grape tomatoes, brushed first with white wine, and roasted on skewers on the grill.

Roasted red potatoes, drizzled with olive oil and rosemary from the garden.  These cook in packages of tin foil on the grill.

Cheeseburgers: Both turkey and beef.

Sauteed onions: My husband can't eat a burger without them.

My husband's burger: He was very proud of it.
Dinner: Cheeseburgers, corn, roasted potatoes, grilled veggies, and cantaloupe.

Day Two hundred and eighty-two

Lunch: Cream of broccoli soup (an extra jar from the freezer) with steamed veggies mixed in.

Dinner: Chicken tetrazzini (crockpot) over whole grain spaghetti, sugar snap peas, cantaloupe, and grapes.  I made a double batch of the tetrazzini in the crockpot, and froze it for a future dinner.  That makes me happier than the initial meal itself!

Dinner: Four-cheese ravioli in a marinara sauce, baby spinach and carrots, and cantaloupe.  We'd just traveled back from visiting friends, and needed a quick meal before getting the kids to bed early.  I'll use any excuse to cook ravioli!

Lunch: Chicken salad on whole wheat potato bread with diced apples and celery, steamed carrots (leftover from last night's dinner), and strawberries.



Dinner: Breakfast for dinner: Pumpkin challah french toast, scrambled cheddar spinach eggs, and cantaloupe.

Lunch: Pizza on whole grain sandwich thins, with spinach and fresh mozzarella.



Dinner: Chicken matzo ball soup.


Dinner: Potato latkes with sour cream and applesauce.

Day One hundred and ninety-five

The incredible tower of waffles. These are whole grain pumpkin waffles, and there were 21 to be exact. Four of them are missing from this photo, as we'd already eaten breakfast when I took it. These waffles have been divided into four packages that are now sitting in my freezer, and will allow my waffle iron to hibernate for quite a while.


Breakfast: Waffles, scrambled cheese eggs (with extra egg whites), and cantaloupe.


Dinner: Leftover medley from the weekend.
