Day Two hundred and ninety-three

Summer pasta salad (which we brought on a picnic; based loosely on Karmel's recipe): Whole wheat pasta, shredded carrot, baby spinach, corn, and chunks of grilled chicken.

Day Two hundred and eighty-six

We had a family BBQ at our house the other day.  My sister and her husband are in town, so it was my parents, grandparents, sister and husband, and my family.  A fun time, and full belly, were had by all.  ;)

Grilled veggies: Zucchini, yellow squash, and grape tomatoes, brushed first with white wine, and roasted on skewers on the grill.

Roasted red potatoes, drizzled with olive oil and rosemary from the garden.  These cook in packages of tin foil on the grill.

Cheeseburgers: Both turkey and beef.

Sauteed onions: My husband can't eat a burger without them.

My husband's burger: He was very proud of it.
Dinner: Cheeseburgers, corn, roasted potatoes, grilled veggies, and cantaloupe.

Day Two hundred and thirteen

Dinner: Rotisserie chicken (BJ's), mashed potatoes, corn and carrots, steamed broccoli, and pear slices. Still under the weather and letting my husband handle meals, which means corn for two nights in a row, lol.


Day Two hundred and twelve


Dinner: Pulled brisket (my husband got this from Trader Joe's) on rolls with steamed vegetables and corn. I was under the weather and not eating, so my husband handled dinner, which of course means "meat!!"

Day One hundred and ninety

Dinner: Chicken tacos (seasoned ground chicken breast, black beans, shredded yellow squash, diced tomatoes, and corn) with light cheddar and sour cream, baby spinach, and canteloupe. This picture is awful, but there wasn't much I could do about it. The taco shell cracked and fell over, and that was that.

Dinner: Bourbon chicken (this was pre-made, it was a quick dinner), mini ravioli with vodka sauce, steamed carrots, corn, and...


Fruit salad. I give credit to Dole for this, and thank goodness for frozen fruit salad in the winter, b/c everything "fresh" in the store did not look fresh.

Day Forty

Dinner: Vegetarian chili (red and white beans, spices, diced tomatoes, butternut squash puree, corn, some leftover rice, a splash of maple syrup) with sour cream and shredded cheddar cheese, whole wheat cornbread (cauliflower, zucchini, and corn purees; recipe: Sneaky Chef), spinach salad, and bananas.

Day Three

Dinner: Cooked by Terry. My only contribution was the fruit. BBQed turkey legs for the carnivores, grilled chicken for those of us who don't want to touch animals' bones (aka- me), corn, steamed carrots, and watermelon.
