Day Three hundred and sixty-six

School lunch for the day: Fresh mozzarella cheese, edamame crackers, cut-up apples, carrots, and cashews.

Dinner: Turkey meatloaf (with green puree ala Sneaky Chef), mashed potatoes, steamed broccoli, and grapes.

Day Three hundred and forty-one

Parmesan basil focaccia (recipe: Gluten Free on a Shoestring) made with the artisan gluten-free flour blend.  I've moved my basil plant indoors so that we can enjoy it year-round, and this was a great way to use some up.

Dinner: Turkey burgers (with green pureed vegetables, ala Sneaky Chef), Parmesan basil focaccia, baby spinach and tomatoes, and fresh pineapple.

School lunch for tomorrow: Diced chicken with celery, apple slices, gluten-free sandwich bread, and fresh mozzarella.

Day Three hundred and thirty-eight

Breakfast: Chocolate strawberry flax-seed crepes.  I was thrilled to take the crepe recipe I've been using (Sneaky Chef) and find it translated perfectly with the artisan gluten-free flour blend.

Dinner: Brown rice pasta marinara, sun-dried tomato chicken sausage, green beans, and fruit salad.

Lunch for tomorrow: Leftover pasta with chicken sausage mixed in, green beans, fruit salad, and fresh mozzarella cheese.  My daughter's lunch doesn't often consist of dinner leftovers, but when it does, boy is it easy to assemble!

Day Three hundred and twenty-three

Breakfast: Pumpkin granola breakfast cookies (recipe: Gluten free on a shoestring), scrambled eggs, and tangerine slices.

Dinner: Brown rice spaghetti, turkey meatballs (with green puree, ala Sneaky Chef), baby spinach, and grapes.

We went to a pumpkin festival in the afternoon, and my daughter was really bummed that we could't buy any of the baked goods for sale there, as the pumpkin pie looked great.  I promised  to make her one when we got home, and I always keep my promises.  This is my grandma's pumpkin pie recipe, and I just subbed gluten-free flour in the crust recipe.  It worked.

Day Two hundred and forty

Dinner: Chicken-spinach pie with mashed potato crust (recipe: Parenting magazine).  This is basically like a chicken pot pie, with a mashed potato crust on top.  I mixed pureed cauliflower into the potatoes, which is a Sneaky Chef technique.  Everyone loves this one, and we had it w/fresh strawberries.

Day Two hundred and thirty-six


Breakfast: PB banana flax seed smoothies (recipe: Cooking Light).


Lunch: Grilled cheese and apples on whole wheat, steamed broccoli, and fresh blueberries.

Dinner: Turkey meatballs (with green puree ala Sneaky Chef), brown rice pilaf (with cauliflower puree, ala Double Delicious), steamed veggies, and fresh fruit. I had two bags of these meatballs in the freezer that I'd made as extras while back, and frozen. When my afternoon went awry due to a sick child, I was more than thrilled to be able to pull these out of the freezer and put together a quick dinner.

Day Two hundred and twenty-six

Dinner: Macaroni and cheese (crockpot; recipe: Make it Fast, Cook it Slow) with pureed cauliflower (ala Sneaky Chef), steamed broccoli, and fresh strawberries. Usually M&C wouldn't be enough protein to suffice as dinner, but this recipe has an egg, 4 c. of milk, and 4. c of cheese, so I let it slide. Also, my husband wasn't home for dinner, so I didn't have to see his sad face when he saw no meat on his plate. ;)

Day One hundred and sixty-nine

Apologies for the delinquent posts... I have an injured husband and daughter, which means I'm online less, and cooking less. Lots of leftovers and quick meals here!

Dinner: Pulled chicken (with pureed butternut squash and caulflower; Crockpot; Recipe: Sneaky Chef) on a Ciabatta roll, green beans, and sliced pears.

Day One hundred and fifty-nine

Lunch: Another batch of garden vegetable soup, this time with mini ravioli.

Dinner: Turkey meatball "parm" sandwiches (with green veggie puree; Recipe: Sneaky chef), fresh baby spinach, and orange slices. These were from a batch of meatballs I'd made a while back and frozen. This evening I did a quick defrost (a last minute doctor's appt prevented making dinner as planned), and threw it together on whole wheat bread with marinara and light mozzarella.

Day One hundred and fifty-three

Lunch: Garden vegetable soup

Dinner: Garden vegetable soup, with turkey meatballs (I thawed a bag I had made a while back-- these are the Sneaky Chef meatballs with pureed green vegetables), and leftover whole wheat penne from a few nights ago. A lovely way to use up leftovers yet have a "new" dinner, without too much cooking.

Breakfast: Banana Blueberry Oat Bran muffins (loosely based on Barefoot Contessa's "Chunky Banana Muffins"), with orange slices and skim milk.


Cinnamon Sugar Rattlesnacks (aka Roasted Chickpeas; recipe: Sneaky Chef).

Dinner: Indonesian peanut butter chicken (crockpot) with matchstick carrots and red peppers (with pureed butternut squash; Recipe [sans squash]: Make it Fast, Cook it Slow), over chow mein noodles, with steamed broccoli, and fruit salad.

Day One hundred and thirty-four

Birthday dessert: Chocolate "donuts." These are one of our favorite desserts, for a few reasons. They taste amazing, but even better, they don't wreck your day. These are the Sneaky Chef's famous "brownie/cupcakes" with pureed spinach and blueberries in them, and they are 100% also whole grain. I'll including a link to the recipe here, as it is worth making!!
Dinner: We ate at my parents before going down to the city for a project of my husband's, so no pics here.

Day One hundred and thirty-one

Purees for the freezer: Green puree (which is a blend of spinach, broccoli, and peas; Recipe: Sneaky Chef).

Mini drop-meatballs (turkey). Meatballs take me forever to make, so I decided to make seven lbs. worth and freeze for future use. Given the giant bowl of turkey I had in front of me, I decided to make them drop meatballs, and save myself some time. I bake them to save myself the extra time of frying, and also they're so much healthier.


Dinner: Magic wontons (which are just the turkey meatballs from above, wrapped in wonton wrappers and lightly pan-fried; Recipe: Sneaky Chef), steamed veggies, and oranges.

Day One hundred and nine

Smiley face dinner: Grilled chicken, asparagus, and triple-stuffed broccoli and cheese potatoes (recipe: Sneaky Chef; This is one of our favorite potato recipes- it has pureed white bean and is the bomb!!)


Meat-eater's dinner (aka my husband): Steak, triple-stuffed potato, asparagus, sauteed onions, and a horseradish sauce. Inspired by all of the cooking, my husband devised his own herb steak rub.

Kids' cooking project, aka Dessert: Brownies. My husband wanted to make these with the kids, which was so cute. We had them with fresh strawberries, which were so sweet that they were gobbled before we remembered to take a picture. Always the creative thinker, my daughter suggested using a plastic strawberry from her play kitchen to use in the picture. ;)

Day Ninety-one

Dinner: Breakfast for dinner. Whole grain banana waffles with sweet potato puree (recipe: Sneaky Chef), turkey sausage, and cheddar spinach omelets. Omelets were made by my husband, as he is omelet king, and I am omelet disaster lady. I can fold a crepe, but not an omelet. I think my subconscious prefers this, as there are very few foods that he cooks willingly.
