Day Two hundred and forty-three

Dinner: Scrambled cheddar spinach eggs on a ciabatta roll, and fruit salad.  I had planned to try a new recipe which looked a bit more time consuming, but the afternoon got busy, so we opted for breakfast for dinner.

Day Two hundred and four

Dinner: Crunchy chicken with rice and green beans (recipe: Rachel Ray) and strawberries. This recipe used a ciabatta role (made into crumbs in the food processor) as the coating for this tasty chicken. Yum.

Day One hundred and sixty-nine

Apologies for the delinquent posts... I have an injured husband and daughter, which means I'm online less, and cooking less. Lots of leftovers and quick meals here!

Dinner: Pulled chicken (with pureed butternut squash and caulflower; Crockpot; Recipe: Sneaky Chef) on a Ciabatta roll, green beans, and sliced pears.

Day Seventy-six

We've had leftovers coming out of our ears since Thanksgiving. I never thought I'd say this, but I'm so sick of sweet potatoes and turkey!! Tonight was the first night I actually made a real dinner, and there's also a breakfast sandwich my husband made. Since I had so many days of non-cooking, I'm not going to count those days, and will count today as where I last left off after last wk's Thanksgiving dinner.


Breakfast: Egg and cheese on a ciabatta roll

Dinner: Whole grain pasta in a ricotta and cheese sauce, with fresh baby spinach (recipe: Make it Fast, Cook it Slow) and then grapes

Day Thirty

Breakfast: Blueberry oatmeal with a hint of maple syrup.


Dinner: London broil stew. I supplied the recipe to my husband, but don't eat meat, so my dinner was leftover chicken stroganoff from the other night.


The full dinner: The beef stew, asparagus, potatoes, carrots, onions, a ciabatta roll, and honeydew.
