Day Two hundred and sixty-five

Smoothie: Before

Breakfast: Spinach mango strawberry smoothies (recipe: Cooking Light).  Referred to as "Martian smoothies" to skeptical children.

Dinner: Grilled ranch chicken (thank you, hubby), whole wheat pasta with steamed spinach, and watermelon.

We haven't eaten this, yet, but it's growing in the garden. What kind of a cucumber is this?!?
S'mores... giant grilled marshmallows obliterated the melted chocolate, but my girls were tickled to be covered in sticky white fluff, so all was not lost.  ;)

Day Two hundred and sixty

Dinner: Chicken marsala (McCormick recipe, adapted for the crockpot) over egg noodles, steamed zucchini and broccoli over romaine lettuce, and watermelon.  A perfect dinner to come home to after an afternoon at the pool!

Day Two hundred and fifty-nine

Breakfast: Scrambled eggs with cheese on a whole-wheat english muffin.

Watermelon.  Technically I did not "cook" this, but as it's taking up plenty of real estate in my fridge, and took quite a while to cut up, it's game.

Dinner: Coconut chicken (crockpot; recipe: Coconut Beef- Make it Fast, Cook it Slow) over brown rice pilaf (with pureed cauliflower; recipe: Double Delicious), steamed broccoli, and watermelon.

Dinner: Whole grain spaghetti with mozzarella (my daughter's request), grilled chicken, salad, and watermelon.

Day Two hundred and thirty

Dinner: "School lunch." My daughter doesn't buy school lunch more than once or twice a month, but was begging the other night to have the "a chicken nugget shaped as a burger" and tater tots. So, I found acceptable versions of them in the store and we had a "school lunch" dinner night. Chicken patties on whole wheat potato rolls, tater tots, cucumbers and carrots, and watermelon. Compromise. ;)

Day Thirty-five

Breakfast: Breakfast risotto (crockpot; recipe: Make it Fast, Cook it Slow). Arborio rice, chopped apples, cinnamon, nutmeg, cloves, and cranberries.


Dinner: Orzo salad, brought to a friend's house. Orzo, olive oil, sun dried tomatoes, fresh basil, Parmesan cheese.


Lunch: Scrambled eggs with cheese, toast, and watermelon.

Day Thirty-four

Dessert (I'm putting this first, b/c it's my favorite): Creme brule (crockpot; recipe: Make it Fast, Cook it Slow). This was SO easy and SO delicious. This woman who wrote this crockpot cookbook is a genius!!


Breakfast: Oatmeal with diced apples and cinnamon.


Dinner: Cheesy rice, bean, and zucchini burritos (whole grain wraps, jasmine rice, red and white kidney beans, shredded low-fat cheddar, and shredded zucchini. I intended to use black beans, but oddly we didn't have any), and watermelon.

Day Thirty-three

Dinner: Brown sugar chicken (crockpot; recipe: Make it Fast, Cook it Slow), over brown rice, with peas, and fresh watermelon. I'm sad to say that watermelon is officially out of season... this one was terrible, and will be the last one I buy until next year!

Day Three

Dinner: Cooked by Terry. My only contribution was the fruit. BBQed turkey legs for the carnivores, grilled chicken for those of us who don't want to touch animals' bones (aka- me), corn, steamed carrots, and watermelon.
