Day One hundred and seventy-three

Dinner: Sliced turkey, sun-dried tomatoes, baby spinach, and melted cheese on a whole wheat sandwich thin; fruit salad (chunks of apple, pear, and grapes), baby carrots and red pepper. This is one of our "no cook" dinners, and I am working on integrating more of these into our busy nights.

Day Forty-six

Sandwich bread: Whole wheat (bread machine). Another recipe from Sarah H., fellow domestic goddess.

Dinner: Teriyaki stir-fry over lo-mein noodles (chicken, broccoli, cauliflower, carrots, and water chestnuts) and sliced pear.

Day Thirty-six

Baking: Pumpkin muffins (whole wheat), mini-muffins, and "donuts" (mini bundt pan). Recipe: Fix, Freeze, Feast. Mini muffins go in the freezer for my daughter's school snack for during the week, and most of the larger muffins go in the freezer for weekday breakfasts.


Breakfast: Pumpkin muffin and sliced pear.

Day Twenty-two

Breakfast: Challah french toast, turkey sausage, and fruit salad.

Dinner: Orzo salad (orzo, fresh basil, sun-dried tomatoes, parm cheese).

Dinner: Orzo salad, BBQ chicken, steamed broccoli, sliced pears.

Day Three

Dinner: Cooked by Terry. My only contribution was the fruit. BBQed turkey legs for the carnivores, grilled chicken for those of us who don't want to touch animals' bones (aka- me), corn, steamed carrots, and watermelon.
