Day Three hundred and fifty-two

Brownies (recipe: The ultimate gluten-free cookie book).  I made these for my daughter to bring in to her class for her birthday.  I was sure they'd never know it was gluten-free, so I was surprised when she told me, "Mom, the kids complained!"  I asked why, and she said, "They wished the brownies were bigger!"  PERFECT.

Dinner: Brown rice fusilli, steamed broccoli, strawberries, and gluten-free chicken nuggets.

Day Three hundred and sixteen

Lunch: Leftover brown rice, mixed with diced tomatoes, red beans, garnished with sour cream and cheddar cheese.

Dinner: Lazy chicken over brown rice fusilli (crockpot; Make it Fast Cook it Slow), steamed broccoli, fresh strawberries.

Day three hundred and ten

Breakfast: Blueberry pancakes (we tried a gluten-free mix that a friend gave us) with turkey sausage and oranges.

Dinner: Turkey burgers, brown rice penne mac and cheese (crockpot; Make it Fast, Cook it Slow), steamed broccoli, and fresh tomatoes and mozzarella.

Day three hundred and five

Dinner: Maple dijon chicken with sweet potatoes (crockpot; Recipe: Make it Fast Cook it Slow), fruit salad (frozen), and steamed broccoli.  I do not like mustard, so I did a little sleuthing online and found white wine to be a good substitution for the dijon.  It worked.

Another gluten-free first: BREAD!  I discovered this cookbook what has quickly become one of my new Bibles, "Gluten-free on a shoestring." In it, there is a great bread recipe.  This was delicious.

A kitchen staple: Vanilla yogurt.  I will always be indebted to the Frugal Girl for her no-frills method, which requires no more than a pot and a picnic cooler for awesome yogurt.

Day Two hundred and twenty-six

Dinner: Macaroni and cheese (crockpot; recipe: Make it Fast, Cook it Slow) with pureed cauliflower (ala Sneaky Chef), steamed broccoli, and fresh strawberries. Usually M&C wouldn't be enough protein to suffice as dinner, but this recipe has an egg, 4 c. of milk, and 4. c of cheese, so I let it slide. Also, my husband wasn't home for dinner, so I didn't have to see his sad face when he saw no meat on his plate. ;)

Day Two hundred and thirteen

Dinner: Rotisserie chicken (BJ's), mashed potatoes, corn and carrots, steamed broccoli, and pear slices. Still under the weather and letting my husband handle meals, which means corn for two nights in a row, lol.

Day One hundred and eighty

Heath chocolate chip cookies (whole grain)

Ground chicken breast, with pureed butternut squash, seasoned to be used in tacos/burritos. After this was cooked, I split it into two packages and froze both for future dinners. This wasn't for tonight's dinner, but since I was already browning ground chicken, I figured I'd cook it all and save myself some steps next time.

Baked ziti, with ground chicken breast, pureed yellow squash, and low-fat ricotta and mozzarella. One was for that night's dinner, and I froze the other.

Dinner: Baked ziti, steamed broccoli, blueberries, and bananas.

Dinner: Teriyaki salmon, vegetarian spring rolls (I didn't make the spring rolls, they came from a local chinese restaurant), steamed broccoli, and egg drop soup (also take-out).

Dinner: Turkey hot dogs on whole grain thin/buns, steamed broccoli and carrots, cantaloupe, and grapes.

Day One hundred and seventy-five

Breakfast: Oat bran blueberry applesauce muffins (recipe: Hodgson Mill) and fruit salad. My husband put some chocolate chips on the top of his, but they were really good even w/o the chocolate.
Dinner: We ate dinner at our friend's house, and brought this over: Fresh steamed broccoli and baby carrots, with a buttermilk-ranch dip (with pureed white beans; recipe: Deceptively Delicious).

Day One hundred and sixty-eight

Breakfast: Pumpkin whole grain waffles (with wheat germ and flax seed), scrambled egg whites with spinach, and sliced pear. I made a double batch of these waffles and froze two breakfast's worth for future mornings.

Dinner: Chicken fried (brown) rice (recipe: Cooking Light), steamed broccoli, and fresh pineapple.

Day One hundred and sixty-six

Lunch: Garden vegetable soup with mini ravioli.

Before: Eggplant spinach rollatini. I made this a few weeks ago, and froze an extra. I thought it looked pretty neat from the bottom.

Dinner: Eggplant spinach rollatini, whole grain pasta with tomato alfredo sauce, steamed broccoli, and sliced pear.

Dessert: Milkshakes (ice cream machine) made with skim milk.

Day One hundred and fifty-six

Breakfast: Cream of wheat with strawberries and maple syrup.

Breakfast: Scrambled egg white with cheese.

Dinner: Mandarin apricot pork (crockpot; Recipe: Make it Fast, Cook it Slow) over whole grain spaghetti; steamed broccoli, and oranges. This looked and smelled so good but since I don't eat pork, I had to trust my family to enjoy it on my behalf. ;)

Dinner: Turkey cheeseburgers on whole grain sandwich thins, homemade steak fries ("Freedom Fries; recipe: Sneaky Chef), and steamed broccoli.
