| Dinner: Spinach eggplant rollatini. I'd made doubles of this a while back and froze one, and tonight was the perfect night to use it. I can never argue with a home-cooked meal that I cooked, but didn't cook today. Te he. Before putting it into the oven, I spruced it up with fresh marinara sauce, and some basil from the garden. |

Granola, extra for the freezer. This is my favorite granola recipe (Fix, Freeze, Feast) and is so easy to make.
