Breakfast: Scrambled eggs with cheese in a brown rice wrap, and fresh pineapple. |
Dinner: Turkey legs. Being that this is too cave-man for me, I ate leftovers, and made sure to fed the girls vegetables and fruit to balance it out. |
Lunchpail muffins (recipe: The Eat-Clean Diet for Family and Kids). I added blueberries. These will go in the freezer to be used as a lunchbox add-in, or school snack. |
I just found your blog and I think it's great! I also have celiac and small children so this is right up my alley. Quick question..what brand of rice wraps do you use? I always have such a hard time with them.
ReplyDeleteThanks for writing. :) We get our brown rice wraps at Trader Joes. There's also another brand called "Food for Life" that we've tried as well, they were at a local health food store, and probably on Amazon. I can't recall how those were packaged, but the T. Joes ones have wax paper between them so they don't stick. I keep them in the freezer and take them out as needed. I find they're best when first crisped in the skillet or griddle. Just crunchy enough to get a great flavor, but not too crunchy that they break.
ReplyDeleteOh great I will try the Trader Joe ones. I seem to remember some information circling around a few weeks back about the Food for Life brand testing positive for unacceptable levels of gluten. I do buy some foods from Trader Joes but notice a lot of their products that are labled gluten free also carry a warning that they are produced on equipment that also handles wheat. I do use there brown rice pastas as they are delicious and very inexpensive.
