Day Three hundred and fifty-four

School lunch for tomorrow (I can tell just by looking at it that my husband made it): Turkey hot dog with ketchup, celery and carrots with PB, grapes, and a gluten-free oreo.

Day Three hundred and nineteen

Dinner: Turkey tacos with avocado, baby spinach, tomatoes, cheddar, and sour cream.

My daughter's gluten-free lunch for tomorrow: Edamame crackers, mozzarella stick, baby carrots and red peppers, fresh pineapple, and a blueberry muffin (just out of the freezer, hence the ice crystals).

Homemade cottage cheese.  I wanted my own organic cottage cheese, but I don't recommend making it.  I hate how store-bought cottage cheese has so many additives, and I read how making your own is *so* easy.  It was... BUT.  Using a quart and a half of milk yielded this tiny amount of cottage cheese, and it did not taste appetizing.  Experiment, failed.  Oh well.

Day Two hundred and seventy-two

A quick lunch: Hard-boiled eggs, whole wheat bread, fresh mozzarella, spinach, baby carrots, and strawberries.

Dinner: Cheddar BLTs (with turkey bacon, on whole wheat).  I am proud to say that this was my first BLT... so tasty! Thanks to Jill for the idea!

Day One hundred and seventy-nine

Lunch: Pizza (fresh water mozzarella, spinach, and marinara on a whole wheat sandwich thin), baby carrots, cut-up apples and grapes.

Dinner: Orient express (chicken and veggie stir-fry; recipe: Annabel Karmel), and fresh strawberries.

Day One hundred and seventy-five

Breakfast: Oat bran blueberry applesauce muffins (recipe: Hodgson Mill) and fruit salad. My husband put some chocolate chips on the top of his, but they were really good even w/o the chocolate.
Dinner: We ate dinner at our friend's house, and brought this over: Fresh steamed broccoli and baby carrots, with a buttermilk-ranch dip (with pureed white beans; recipe: Deceptively Delicious).

Day One hundred and seventy-three

Dinner: Sliced turkey, sun-dried tomatoes, baby spinach, and melted cheese on a whole wheat sandwich thin; fruit salad (chunks of apple, pear, and grapes), baby carrots and red pepper. This is one of our "no cook" dinners, and I am working on integrating more of these into our busy nights.
