Day Two hundred and seventy-eight

Dinner: Turkey sloppy joes (with diced apple, pureed butternut squash, and shredded zucchini) on ciabatta rolls, with steamed vegetables and fresh pineapple.  This meal came right out of the freezer, and I'd made a double batch of sloppy joes a while back and froze a bag of it.  Tonight I stirred in shredded zucchini and it was ready to go.  Usually I made whole wheat rolls to go with this, but we were out all day, so there wasn't time.

Turkey sloppy joes:

1 diced apple
1 lb. lean turkey
1/2 small green pepper, diced (I usually omit this)
1 c tomato sauce
2 tbsp ketchup
1 tsbp white vinegar
1 1/2 tsp worcestershire sauce
2 tsp sugar
1/2 cup pureed orange vegetable- (butternut squash, pumpkin, sweet potato, or carrot all work well).

Saute meat, onions, apple, and pepper 8 mins, or till brown. Drain. Add the rest of the ingredients, mix well and break up meat w/wooden spoon. Simmer on med-low, uncovered, 10 mins, stir occasionally.

Serves 4-6 people, serve over buns, eng. muffins, etc.

Dinner: Chicken tacos (with pureed butternut squash, shredded zucchini, black beans, and diced tomatoes) with baby spinach, sour cream, shredded cheddar, and strawberries.

Day One hundred and sixty-nine

Apologies for the delinquent posts... I have an injured husband and daughter, which means I'm online less, and cooking less. Lots of leftovers and quick meals here!

Dinner: Pulled chicken (with pureed butternut squash and caulflower; Crockpot; Recipe: Sneaky Chef) on a Ciabatta roll, green beans, and sliced pears.

Day One hundred and fifty-two

Lunch: Pizza muffins on whole grain sandwich thins, peas, and sliced apple. My daughter didn't want to eat pizza for lunch, until I offered to let her make it... then she helped, and promptly gobbled it up. Perfection.


Dinner: Chicken enchiladas on whole grain tortillas (with pureed butternut squash and cauliflower), fresh strawberries, and steamed broccoli. This was another night when the freezer saved me-- I'd previously made a batch of grilled chicken and frozen it for future use. After thawing and turning it into enchilladas, dinner was made without a dishful of dirty pots and pans.
